The Best Pumpkin Chocolate Chip Cookies Ever

You probably think you have the best pumpkin chocolate chip cookie recipe and if you have this recipe, then you are correct. ;)
We've been making this particular pumpkin chocolate chip cookie recipe in my family for decades and we never tire of it! It makes A LOT. So keep that in mind.
If I don't have time to bake them, I will usually place balls of dough in the freezer on a cookie sheet until hardened and then transfer to a ziploc freezer bag and keep them in there until we run our and want more. If you do this method, be sure to place the doughs on a cookie sheet to thaw before baking!

The Best Pumpkin Chocolate Chip Cookies Ever
1 1/2 cups shortening (I use Crisco Butter Flavored)
4 cups sugar
3 eggs
1 large can (29oz) pumpkin puree
2 packages chocolate chips (or more)
1 tablespoon vanilla
7 1/2 cups flour
1 tablespoon nutmeg
1 tablespoon cinnamon
1 tablespoon baking soda
1 tablespoon baking powder
1 1/2 teaspoon salt
Preheat oven to 375*F
In large bowl, cream together shortening, sugar, and eggs. Add pumpkin and vanilla until well incorporated.
In separate bowl, mix together flour, nutmeg, cinnamon, baking soda, baking powder and salt. Slowly add flour mixture to creamed mixture. Stir in chocolate chips.
Drop dough onto cookie sheet and bake for 12 to 15 minutes.
